Orange Jicama Slaw

Ingredients

  • 4 cups peeled, coarsely shredded jicama
  • 1/4 cup shredded radishes
  • 1/4 cup finely chopped green onion
  • 2 tablespoons minced fresh mint
  • 1/4 cup Smucker's? Sweet Orange Marmalade
  • 2 tablespoons Crisco? Pure Vegetable Oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon finely grated lemon peel
  • 2 teaspoons grated gingerroot
  • 1/2 teaspoon salt

Directions

  1. TOSS together jicama, radishes, onion and mint in medium salad bowl.
  2. WHISK together marmalade, oil, lemon juice, lemon peel, gingerroot and salt in small bowl.
  3. POUR dressing over salad. Toss well.
