Filet Mignon with Berry Pan Sauce

Ingredients

  • 4 (6 to 8 oz.) filet mignon steaks
  • Salt and pepper
  • 1 tablespoon Crisco? Pure Vegetable Oil
  • 4 tablespoons butter, divided
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup dry red wine
  • 1/4 cup water
  • 1/4 cup Smucker’s? Mosaics? Strawberry Blackberry Fruit Spread
  • 1/8 teaspoon fresh thyme leaves

Directions

  1. SEASON both sides of steaks generously with salt and pepper. Let stand at room temperature 30 minutes.
  2. HEAT oil in large skillet over medium-high heat. Place steaks in skillet. Cook 4 minutes. Turn and cook an additional 4 to 7 minutes or until desired doneness. Remove from skillet. Cover with foil and let rest while preparing sauce.
  3. ADD 3 tablespoons butter to pan drippings. Heat over medium-low heat. Stir in onion. Cook, stirring frequently, about 5 minutes or until onion is tender.
  4. STIR in garlic; cook 30 seconds. Stir in wine and water. Bring to a boil over medium-high heat. Reduce heat to medium-low. Stir in fruit spread and thyme. Simmer 2 minutes or until sauce is slightly thickened. Stir in remaining 1 tablespoon butter until melted. Serve sauce over steaks.
